Ingredients:

  • 200g mixed candied fruits (such as orange peel, lemon peel, cherries, and pineapple)
  • 150g dried fruits (raisins, sultanas, currants)
  • 100g chopped nuts (walnuts, almonds, or hazelnuts)
  • 200g all-purpose flour
  • 150g butter, softened
  • 150g sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • A pinch of salt
  • 50ml rum or orange juice (for soaking fruits)
  • Zest of one orange
  • Zest of one lemon

Preparation:

  1. Prepare the fruits:

    • In a bowl, combine the candied fruits, dried fruits, and chopped nuts.
    • Soak the mixture in rum or orange juice for at least an hour, or overnight for a more intense flavor. Drain excess liquid before adding to the batter.
  2. Prepare the cake batter:

    • Preheat the oven to 170°C (340°F) and grease and flour a loaf pan or cake tin.
    • In a mixing bowl, beat the softened butter and sugar together until light and fluffy.
    • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and citrus zest.
    • In a separate bowl, combine the flour, baking powder, cinnamon, and salt. Gradually add this dry mixture to the wet ingredients, folding gently to combine.
    • Add the soaked fruits and nuts to the batter, ensuring they are evenly distributed.
  3. Bake the cake:

    • Pour the batter into the prepared tin and spread it out evenly.
    • Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cake cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely.
  4. Serve:

    • Once cooled, the fruit cake can be served on its own or dusted with powdered sugar for an elegant touch. It’s also delicious with a dollop of whipped cream or a drizzle of vanilla sauce.
