Fruit Cake with Candied Fruits
Ingredients:
- 200g mixed candied fruits (such as orange peel, lemon peel, cherries, and pineapple)
- 150g dried fruits (raisins, sultanas, currants)
- 100g chopped nuts (walnuts, almonds, or hazelnuts)
- 200g all-purpose flour
- 150g butter, softened
- 150g sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- A pinch of salt
- 50ml rum or orange juice (for soaking fruits)
- Zest of one orange
- Zest of one lemon
Preparation:
Prepare the fruits:
- In a bowl, combine the candied fruits, dried fruits, and chopped nuts.
- Soak the mixture in rum or orange juice for at least an hour, or overnight for a more intense flavor. Drain excess liquid before adding to the batter.
Prepare the cake batter:
- Preheat the oven to 170°C (340°F) and grease and flour a loaf pan or cake tin.
- In a mixing bowl, beat the softened butter and sugar together until light and fluffy.
